Here is a nifty little tool that would take an edgeloop, straighten it out like a string and make the rest of the UV shell follow along.

Select either edgeloops or UVs (for border edges) on an edgeloop of shells You can select multiple shellsChoose Align, Straighten or both Select straighten method (Unfold is by far fastest, Strict can overwhelm the machine!)

Select an edge, edgeloop or 2 UV points on each shell.
